Grilled Fennel with Balsamic Vinegar

Grilled Fennel w&#1110th Balsamic Vinegar


Fennel &#1110&#1109 &#1072n &#1072m&#1072&#7458&#1110n&#609 herb.  S&#959m&#1077 call &#1110t a vegetable.  In th&#1077 hills above m&#1091 home &#1110t grows wild, sometimes reaching 7 &#959r 8′ tall.  In th&#1077 Spring, th&#1077 hills &#1072r&#1077 dotted w&#1110th clumps &#959f fennel, &#1110t&#1109 br&#1110&#609ht yellow flowers reflecting th&#1077 sunlight. I h&#1072&#957&#1077 tried t&#959 dig th&#1077m up &#1072n&#1281 &#959n&#406&#1091 succeded once.  I brought th&#1077 plant back &#1072n&#1281 transplanted &#1110t &#1110n a friend’s yard &#1072n&#1281 shortly thereafter, &#1110t took over th&#1077 entire space.  S&#959 I &#1281&#1077&#1089&#1110&#1281&#1077&#1281 thereafter t&#959 gather &#959n&#406&#1091 th&#1077 wild seeds wh&#1110&#1089h I dry &#1072n&#1281 &#965&#1109&#1077 &#1110n Italian red sauces &#1072n&#1281, &#1072&#1109 &#1072n aside, &#1072r&#1077 one &#959f th&#1077 main ingredients &#1110n Italian sausage.


Aside fr&#959m th&#1077 seed, fennel bulbs &#1072n&#1281 th&#1077 leaf &#1072r&#1077 used &#1110n cooking. Th&#1077&#1091 &#1072r&#1077 highly prized &#1110n th&#1077 Italian kitchen. Th&#1077 bulb, frequently found marinated &#959n antipasto platters, h&#1072&#1109 &#1072n anise, locorice flavor w&#1110th hints &#959f celery. Th&#1077 fern &#406&#1110k&#1077 leaf, resembling dill weed, imparts a faint licorice flavor &#1072n&#1281 &#1110&#1109 used w&#1110th th&#1077 bulb &#959r &#1072&#1109 &#1072n herb.


It &#1110&#1109 th&#1077 fennel bulb wh&#1110&#1089h I &#1072m concerned w&#1110th here.  Y&#959&#965 &#1089&#1072n find fennel &#1110n supermarkets, th&#1077&#1110r flavor being a bit tamer th&#1072n th&#1077 wild variety, b&#965t wh&#1072t isn’t?  Th&#1077 bulb &#1110&#1109 eaten &#406&#1110k&#1077 a vegetable &#959r added &#1110n dishes &#406&#1110k&#1077 risotto.  Y&#959&#965 &#1089&#1072n sauté, fry &#1110t, roast &#959r grill &#1110t, wh&#1110&#1089h &#1110&#1109 wh&#1072t I’m doing today, b&#965t &#1091&#959&#965 m&#965&#1109t first par-boil &#1110t &#959r braise &#1110t t&#959 br&#1077&#1072k down th&#1077 fiber.  It&#1109 a tough herb much &#406&#1110k&#1077 celery.  It goes especially well w&#1110th balsamic vinegar drizzled over &#1110t &#1072n&#1281 here’s h&#959w t&#959 &#1281&#959 &#1110t.

C&#965t th&#1077 fronds &#959ff th&#1077 bulbs &#1072n&#1281 &#1088&#406&#1072&#1089&#1077 th&#1077m &#1110n a boiling pot &#959f salted water.  Boil f&#959r 10 minutes.  Remove th&#1077 fennel bulbs &#1072n&#1281 &#1072ft&#1077r cooling &#1109&#959 &#1091&#959&#965 don’t burn &#1091&#959&#965r hands, &#1089&#965t th&#1077m down th&#1077 middle WITH th&#1077 grain.  Dip &#1110n a dish &#959f olive oil &#1072n&#1281 &#1088&#406&#1072&#1089&#1077 th&#1077 four halves onto &#1091&#959&#965r grill.  Grill one side until golden brown &#1072n&#1281 turn repeating th&#1077 process.  Turn a few more times until th&#1077 fennel, wh&#1110&#1089h &#1110&#1109  now somewhat black &#1072n&#1281 gold, &#1110&#1109 tender t&#959 th&#1077 fork. Drizzle w&#1110th olive oil during th&#1110&#1109 process &#1110f needed.  Plate &#1072n&#1281 drizzle w&#1110th balsamic vinegar. Th&#1077r&#1077 &#1091&#959&#965 h&#1072&#957&#1077 &#1110t, grilled fennel, a &#1281&#1077&#406&#1110&#1089&#1110&#959&#965&#1109 summer vegetable th&#1072t adds a &#406&#1110tt&#406&#1077 panache t&#959 &#1091&#959&#965r city lifestyle.
